Penne Veggie Pasta (Gluten-Free)

I love making this Penne veggie pasta dish! It is gluten-free and loved by the whole family. This is a good way to add veggies to different meals the kids love. In this recipe, I’m sharing a video I shared on social media of a quick and easy pasta dish that will get your family to eat more veggies. This penne veggie pasta dish is gluten-free, but you can switch out this particular penne pasta for a non-GF one. Please note, the saucier you make it, the better. 🙂

INGREDIENTS

Because I love to make our meals as healthy as possible, I typically aim for organic products as much as I can. Therefore, when you can or if the finances allow, aim for organic. Otherwise, know that a home cooked meal (organic ingredients or not) is far more nutritious and healthy than fast food any day. Also, I don’t measure spices because I season to my desired taste preference…I know that’s annoying for you 🙂

Ok, here are the ingredients needed for this penne veggie pasta:

  • Penne (gluten free or regular). I love the Jovial brand for gluten-free
  • 1-2 TBSP Olive oil
  • Frozen grilled veggies of choice. I love this one from Wegmans called Special Blends Grilled Vegetables. It includes eggplant, zucchini, red and yellow bell peppers, and onions.
  • Garlic (2 cloves, diced)
  • Onions (1/4 cup, diced)
  • Salt (to taste)
  • Pepper
  • Adobo (to taste)
  • Sazòn (optional)
  • Spaghetti sauce (I used the tomato basil flavor and 2/3 of the bottle)
  • 1/2 cup of water
